Gramm


A couple of weeks ago, i decided to rediscover Gramm. My daughter had just arrived in Brussels for a visit and that obviously called for a celebration! Both my daughter and I love to be surprised by inventive cuisine. So with their five course discovery menu, Gramm was the perfect place to go.

The owner and chef of Gramm is Kenzo Nakata. His Breton and Japanese ancestry compliments many of his dishes. A little yuzu here and some miso there, it all comes together in delicate tones to please the palate. Every dish is well thought out and in Japanese precision. On the night we went, we were presented a perfectly made falafel, a chick pea velouté with a carrot oil as an appetizer, and a delicious brioche bread with whipped yuzu and tarragon butter, which set the tone for our meal. Then the menu said: Tartiflette… expecting something heavy, we were very surprised by what we were served. It was a mix of caramelized onions with a reblochon cheese espuma, as light as air, but with a perfectly replicated tartiflette taste! Followed by trout raviolis in a chervil sauce and smoked trout eggs and then a bintje potato wrap filled with colonnata (an Italian cured pork) and a poached egg yolk. The last dish in the main courses was skrei, also known as winter cod, with nori, a beurre blanc and braised romaine lettuce. This beautiful meal ended on a sweet note with chocolate, hay and Jerusalem artichokes, the flavors were perfectly matched. The menu was 70 euros and an extra cheese plate was available for an extra 12 euros.

The restaurant lighting is very subtle, and is perfect for intimate dinning. They have a choice of wine pairing (at a cost of 60 euros per person) or a very nice list of natural wines. We opted for a bottle of pinot noir for our meal, recommended by Kenzo. Light, fruity and with a touch of tannins.

If you’re looking for a meal that awaken your taste buds and delight you with flavors and textures, make your way over to Gramm. They also have a lunch menu for a very reasonable 28 euros on Thursday and Friday. They’re just a few steps away from Place Sainte-Catherine and the metro station.
