This autumn, they’re introducing a succulent pheasant dish, showcasing rich, earthy flavors with local ingredients. Also featured on their menu is a classic vol-au-vent, with tender chicken and flavorful meatballs enveloped in a creamy, velvety sauce. This comforting dish was accompanied by perfectly cooked, golden fries and a side of homemade mayonnaise that added just the right richness.
A new chef and a fresh new look on food
Born in Jette, a northern part of Brussels, Luis Reynaerts embodies both passion and precision in his culinary journey, which is remarkable given his young age of 22. A graduate of Ecole Hôtelière Provinciale de Namur - Citadelle, he recalls his school days as “the best time of his life.”
His professional path began impressively as Second at Chez Bruneau, the legendary restaurant that once held three Michelin stars under chef Jean-Pierre Bruneau, before it was sold to Maxime Maziers in 2018 and closed in 2023. This experience laid the foundation for his growth, leading him to Les Brigittines and then to Beaucoup Fish, where he excelled as sous chef.
Now at Beaucoup Belge, he is thrilled to work alongside Jordan Roberfroid, the owner of both Beaucoup Belge and Beaucoup Fish, embracing his latest role with energy and ambition. His plates reveal a thoughtful balance of flavors, as seen in his pheasant, paired with a rich, glossy sauce, Pont Neuf potatoes, and tender braised Belgian endives. We also savored a delicious Toast Champignons, a delightful blend of wild mushrooms, enhanced with a few crunchy walnuts for texture. Reynaerts’s cooking speaks of a young talent harmonizing tradition with modern touches, and it’s a pleasure to see where his culinary journey will lead.
