Entropy
Entropy is a little bit of poetry with a modern twist. Every dish is full of surprises and precision. I was very curious about Entropy, a no waste establishment, how does that work? It’s a new way of thinking and an example I’m sure will others will adopt in the future. I got to visit this beautiful establishment with my good friend Valerie de Ketelaere, from Bazaar Trottoir.
It’s hard not to admire Elliott Van de Velde’s dedication to the food industry. In 2019 Elliott created a non profit organisation named the Hearth Project. It’s aim is to feed the less fortunate with unsold food items that deserve to be used and cooked. He is also a Metro Food Waste Ambassador. So a wonderful collaboration developed between Entropy and Metro (a grocery store destined for restaurateurs). Entropy receives unsold items from Metro, they use the most common ingredients for meals for Hearth Project and use the the higher end ingredients for the restaurant. Simple enough, but this forward thinking is admirable. And it’s this sense of social a environmental responsibility that earned Elliott a place on the 2022 Top Chef television show.
This type of cooking requires a lot of out of the box thinking. This goes beyond ordering food items for a menu a chef is creating. It’s receiving items and thinking: what will we make? It’s cooking that opens your imagination and makes you appreciate every ingredient.
The dishes are gorgeous and concentrate on quality instead of quantity. A five course preset dinner is presented with a choice of different drink formulas. The menu centers mainly around vegetables and fish. With some of their vegetables coming for their own city garden, behind the restaurant. The garden is also something to mention. It’s set on a historical square, which used to be a nunnery. It’s thought to be the first food market in Brussels.
Entropy is a discovery that everyone should have on their list. The portions are on the smaller side, but it goes hand in hand with their no waste philosophy. And the dishes are so beautiful that it’s worth every penny. Their kitchen is mainly dedicated to the Hearth Project, so the restaurant is only open three nights a week. So make sure to reserve and let your taste buds have a party!
